  1. Preheat oven to 450º
  2. Place drumsticks in large bowl and toss them with oil (I used olive oil), 1 tsp garlic powder, 1 tsp salt, and lime juice. Place drumsticks on an unlined baking sheet and bake until internal temperature reaches 165º. (About 1 hour)
  3. Once the drumsticks are close to being fully cooked, being making the sauce. Combine remaining salt, garlic powder, onion powder, coconut aminos, pineapple juice, fresh grated ginger, red pepper flakes, and a squeeze of lime juice in a saucepan and bring to a simmer. Mix the tapioca starch in a little bit of water and add to the sauce if it needs thickening.
  4. Once drumsticks reach temp, remove from oven and place in a heat safe bowl. Pour sauce over the top and mix together until chicken is covered.
  5. Serve topped with green onion & cilantro.
