Hi friends,

I started the Keto/Low Carb diet a few weeks ago and have had to create a few new staple recipes to keep myself motivated. This is the second time I have made this mini meatloaf recipe and it is such an easy recipe to prep and eat off of for a few days for lunch or dinner! So far, I am down 12.4 lbs and have been sleeping much better at night and I think I will stick with this as a lifestyle for awhile. Please send me your favorite Keto recipes!

Instructions
  1. Directions:
  2. Preheat oven to 350 degrees.
  3. Grease muffin tray.
  4. Mix all ingredients in a large bowl using your hands or a spatula.
  5. Use cookie dough scoop and fill 10 of the muffin spaces with the meat mixture.
  6. Bake for 25 minutes or until internal temperature reaches 165 degrees.

Notes: These Keto Mini Meatloaves are the perfect filling lunch or dinner. I top them with a mix of Tabasco sauce, sugar free ketchup, garlic powder, and Parmesan and heat a couple up when I need a quick dinner. Recipe makes approximately 10 loaves.
