I started the Keto/Low Carb diet a few weeks ago and have had to create a few new staple recipes to keep myself motivated. This is the second time I have made this mini meatloaf recipe and it is such an easy recipe to prep and eat off of for a few days for lunch or dinner! So far, I am down 12.4 lbs and have been sleeping much better at night and I think I will stick with this as a lifestyle for awhile. Please send me your favorite Keto recipes!

Ingredients
- 1 lb ground beef I use 80/20 for a higher fat content
- 1 large carrot, grated
- 1/3 c chopped red or orange pepper
- 1/3 c chopped yellow onion
- 4 oz. softened cream cheese
- 1/4 c grated Parmesan cheese
- 4 oz fresh diced mozzerella
- 1/2 c Pork Panko or ground pork rinds
- 1/2 c almond flour
- 1 large egg
- 1/3 c beef broth
- 1 TBSP Worcestershire
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 TBSP Italian seasoning ]
- 1/2 tsp garlic powder
- 1/2 tsp parsley

Instructions
- Directions:
- Preheat oven to 350 degrees.
- Grease muffin tray.
- Mix all ingredients in a large bowl using your hands or a spatula.
- Use cookie dough scoop and fill 10 of the muffin spaces with the meat mixture.
- Bake for 25 minutes or until internal temperature reaches 165 degrees.
Recipe Notes
Notes: These Keto Mini Meatloaves are the perfect filling lunch or dinner. I top them with a mix of Tabasco sauce, sugar free ketchup, garlic powder, and Parmesan and heat a couple up when I need a quick dinner. Recipe makes approximately 10 loaves.
