I am on Day 11 on the October Whole 30 & feeling great. Meal prep is obviously a major part of the process, so I try to stock up my fridge at the beginning of the week and plan our my meals accordingly!
Sunday, when I was placing my Walmart Grocery Pickup order, I decided I wanted Buffalo Wings for a special treat this week. I found an approved recipe & ordered the ingredients…. or so I thought! I pulled out my chicken wings today, only to find out they had given me LARGE chicken drumsticks. I decided to wing it & come up with a quick marinade & it turned out better than I could have imagined! This was so delicious & I will keep this in my recipe book from now on. They were the perfect amount of tangy, sweet, & spicy!

Tangy Hawaiian Chicken Drumsticks - Paleo/Whole 30 Approved!
A Paleo & Whole 30 Approved drumstick option. Perfectly sweet, spicy, & tangy and the skin gets very crispy! A totally wholesome option for the entire family! Serve with veggies!

Place drumsticks in large bowl and toss them with oil (I used olive oil), 1 tsp garlic powder, 1 tsp salt, and lime juice. Place drumsticks on an unlined baking sheet and bake until internal temperature reaches 165º. (About 1 hour)
Once the drumsticks are close to being fully cooked, being making the sauce. Combine remaining salt, garlic powder, onion powder, coconut aminos, pineapple juice, fresh grated ginger, red pepper flakes, and a squeeze of lime juice in a saucepan and bring to a simmer. Mix the tapioca starch in a little bit of water and add to the sauce if it needs thickening.
Once drumsticks reach temp, remove from oven and place in a heat safe bowl. Pour sauce over the top and mix together until chicken is covered.
Serve topped with green onion & cilantro.
